Stephan completed his apprenticeship at one of Denmark's finest Michelin Star restaurants between 1988 to 1991.
From 1991 and 2000 Stephan worked in Europe at a number of fine dining restaurants and top International 5 Star Hotels as an Executive Sous Chef, Head Chef and was soon to become Executive Chef. Whilst he was in England, the hotel he was working at managed to beat The Connaught, Claridges, The Savoy and The Four Seasons, to notch up 91.7/100 in the best restaurant league.
Between 2000 and 2008 Stephan worked at a number of top international 5 Star Hotel chains in South East Asia as Executive Chef. Between 2008 and 2010 he made a stopover in Eastern Europe to discover that part of the world, before settling back in Europe in 2011.
